Crispy Cod Fillets

Yumm!


Ingredients
1/4 cup dry seasoned bread crumbs
4 Cod fillets, thawed if frozen
1/4 teaspoon salt
1/8 teaspoon black pepper
Pam
1 tablespoon fresh lemon juice

Directions
1. Place bread crumbs in a shallow dish and set aside

2. Rinse fish: pat dry with a paper towel. Sprinkle evenly with salt and pepper. Add to bread crumbs, turn over to completely cover each side of the cod.

3. Spray a large pan with cooking spray (PAM), heat for 1 minute over medium high heat. Add fish, cook for 10 minutes or until fish easily flakes with fork (145 F), turning after 5 minutes. Remove from the pan and drizzle with lemon juice.

Serve with a side of salad, or some kind of steam veggie!
